TURKEY
1) It is safest to thaw a frozen turkey in your Refrigerator. Keep in mind it takes 4-5 days for a 20 lb. turkey to defrost.
2) For crispy skin, leave the turkey uncovered in the refrigerator for one day.
3) Don’t peak! When you open the oven, it causes the temp to fluctuate. That increases the risk of drying out the bird.

FOR THE CLEAN UP
1) Start with a clean slate. Organize and clean out your refrigerator to make room for ingredients and leftovers. Try to dedicate a shelf or two for before the holiday so you can avoid adding clutter to clutter.
2) Prepare your pans. There is not need to clean what you don't dirty. The day before you begin cooking, line all necessary pans with heavy-duty tin foil.
3) Double or triple line cans so which saves time when the clean up begins.
4) Create a soaking bin. Don't fill your sink with soaking pots and plates. Instead, use a small trashcan or storage bin, lined with a plastic bag. Before the cooking begins, fill with hot water and soap. As you plate your food, add them to the bin.
5) Stop Stains. If your serving wine, keep a small container with this hydrogen peroxide and dish soap mix on hand. If you see a while stain, while it's still wet tab it with the mix on a clean cloth. Also prevent water stains on furniture by rubbing toothpaste (not gel) on it, in the direction of the grain.
